White Truffle
The truffle is the common denominator of all the Upper Tevere area, king of the table almost all year round except for the second half of April and the months of May and September, you can collect at least one area of the species present. What distinguishes this particular area is in fact the great variety of the famous underground fungus. But the diamond table altotiberina is undoubtedly the Tuber magnatum, commonly called white truffle or truffle and universally recognized as the choicest and most precious of all.
